Some Kinda Dairy Kugel


This is clear some kind of milchik kugel, but what I have no idea. Maybe the sideways text on the left could help enlighten us since the second word is recipe (recipi), but it might just be someone's name.

Cheese Kugel

Recipe So Far
1 c sour cream
1 c cottage cheese
1 c milk
6 eggs
1 c pineapple
little raisins
1 c apples
1 c ????? (probably butter again)
1 sugar (I assume a cup)
honey 1/2 (assume a cup)

My guesses:
1 c pajenepel = 1 c pineapple
ledel rezink = little (a few) raisins

This sounds delicious already!

Could the thing along the side actually mean "dairy recipe" (tiri recepi)?

you are definitely right on the ingredients, but I'm not so sure about the text on the side.

here is what we have now:

The recipe title is "Cheese Kugel"-- cziz = cheese. Which means that the second ingredient down is some kind of cheese too, since it ends in "cziz," but I haven't figured out what just yet.

Is it possible that the words on the side mean "TV recipe" (tivi recipi)? Did she ever get recipes from TV shows? Also, the last word could be "honey." (1/2 cup?) Sam's right that there must be some kind of cream or cottage cheese in there, and shortening. Does she ever call things by their brand names--that could add to the confusion!

I did some sleuthing on the Web and came across a recipe for Slovak Cheese Coffee Cake (Syr Kava Kolac) that uses cream cheese. I wonder if what looks like "kave cziz" might be cream cheese. Could that be what they called it in Hungarian? (Or am I reading too much in?)

Dear Brett, I think it is so wonderful that you are trying to collect your Bubbie's recipe. What a wonderful way to transmit her love for you via cooking, to your children. The recipe for aye kichel:
this means egg cookie, but they are not really a cookie per se. They are those big twisty knot things they serve at synagogue, some have sugar sprinkled on top. I don't know how to make them, but they look like pieces of dough which are slightly twisted, and when baked, they puff up and are filled with air when your bite into them. Do you know what I mean? Just came across your bubbe's wonderful recipes. Here are my guesses:

I believe 1 C kave cziz is likely "cottage cheese". I can't figure out what the ingredient after apples is, but the fat is missing from the recipe so it might be butter?? And I think the last ingredient is honey to drizzle on the top. Lovely.

This looks a lot like a recipe I make for my family on holidays:
Cheese Noodle Kugel
1lb broad egg noodles
5 eggs
1/2 cup sugar
8oz cottage cheese (I use Ricotta, it's they way my Nana did it.)
1/2c sour cream
1/2 cup white raisins
1tsp vanilla
8oz can of crushed pineapple(we usually skip this)
Cinnamon to taste, we just add it until it looks right.

Mix all the ingredients together. Place in a large well buttered baking dish (about 2" deep)and bake at 350 30-40 min.

i believe under sour cream is cottage cheese as that is what is usually used in kugel
